Carrot Cookies

1 cup shortening (can be half butter or margarine if desired)

3/4 cup granulated sugar

1 egg

1 cup carrots, cooked and mashed

2 1/2 cups sifted flour

1/2 teaspoon baking powder

1/2 teaspoon salt

1 teaspoon orange juice

2 teaspoons orange rind

1 cup nuts (optional)

Cream together the shortening and sugar. Add the egg and carrots and beat well. Add the remainder of the ingredients and mix well. Drop by rounded teaspoonfuls onto a greased cookie sheet. Bake at 375° for 10 minutes.When cool frost with icing:

Icing:

Grated rind from one orange

Juice of 1/2 orange

Powdered sugar to spreading consistency
